Olive Trees
il circolo’s oil comes from olive trees that grow on the southern slopes of the Monte Iblei at several hundred meters above sea level. From there you have a breathtaking view of the baroque city of Noto (UNESCO World Heritage Site) and the southern tip of Sicily, where the Ionian Sea and the Strait of Sicily meet and the wind carries salts and minerals into the land.
Olive Grove
The mineral-rich limestone soil and the altitude of the olive grove provide ideal conditions for our olive varieties, which have been cultivated here for generations. Farming at these higher altitudes is more laborious and expensive, but the conditions for the trees are all the better, allowing the production of a superior olive oil with a unique taste.
Single Origin
il circolo olive oil comes exclusively from olive groves near Noto in sunny southern Sicily. Every liter of our olive oil can be traced back to its origin. Only when the bottles are sealed do they leave the mill and the region around Noto.
